Ingredients1 C. corn meal
boiling water
4 T. flour
2 t. baking powder
3/4 t. salt
1 T. molasses
1 egg
1 C. milk
How to make Corn Meal Griddle Cakes
Scald the corn meal with just enough water to cover it. (It might be best to use a shallow bowl so the water can get to the bottom easily)
Let stand 5 minutes, then add flour, salt and molasses.
Thin to a batter with the beaten egg and milk.
Add the baking powder last, beating it in well.
Cook on a greased griddle over medium heat.
